Yunnan Golden Tips
Also known as Golden Monkey, produced by hand in early spring, the leaves are large, twisted and black with lots of golden tips producing a sweet caramel flavour.
Grown in a region bordering the Assam Valley of India, black teas from this region are also known as ‘Dian Hong’ - ‘Dian’ being the short name for Yunnan, ‘hong’ meaning red after the deep, red liquor of the brewed tea.
Fun Fact - Before the Second Sino-Japanese War (1937-1945), Yunnan only produced green tea. This changed during the conflict when many south eastern tea-growing provinces became warzones. Yunnan was vital to China maintaining its black tea industry and with climatic and geographical conditions similar to those of Assam, India, this region made for excellent black tea production, as it continues to do so today.
Ingredients: Chinese Yunnan Golden Tips Black Tea
Preparation: Steep 1tsp per cup for 3-5 minutes in 88-100°C water.
